Summer brings an abundance of native fruits, and among them, mangoes are dominating the market with the aroma of different varieties and flavours of mango wafting around.
Most of the people eat the fleshy part of the mango directly after peeling it. Some people like to mix mango and milk with rice. Apart from this, various recipes can be made with mangoes.
Let's know about some mango recipes-
Mango ice cream
Ingredients: Mango pulp or puree 1 cup, powdered milk 2 cups, egg yolk 2, gelatine powder 1 tablespoon, water 1 cup, sugar 1 cup, cornflower 1 tablespoon, and cream 3 tablespoons.
Method: Beat egg yolks. Mix powdered milk with water, cornflour, mango puree, sugar and yolk and keep stirring on medium flame. After stirring for a while, add the rest of the ingredients and reduce when thickened. After cooling, pour the mixture into ice cream and refrigerate. Serve when the ice cream is cold.
Mango Smoothie
Ingredients: 1 cup of ripe mango pieces, 4 tablespoons of sugar, 1 cup of water, 1 teaspoon of mint leaves, 1 teaspoon of lemon juice and one and a half teaspoons of basil seeds.
Method: Soak the basil seeds in water for 15 minutes. Cut the mango into pieces. Blend mango, sugar, mint leaves, and lemon juice in 1 cup of water in a blender. Then mix basil seeds and serve.
Mango mousse
Ingredients: 1 cup of mango puree, half a cup of cream, 1 tablespoon of gelatine, 2 egg yolks, 2 tablespoons of sugar and half a cup of condensed milk.
Method: Place a bowl over hot water and beat egg yolks and sugar in it. Then add the melted gelatine. Mix together with condensed milk and mango puree. Pour the whipped cream into the serving bowl. Refrigerate and chill. Serve when frozen.
Mango Crepes
Ingredients: Mango pieces half a cup, eggs 2, sugar half a cup, milk half a cup, flour 2 tablespoons, butter 1 tablespoon, cream 1 tablespoon, a little salt and vanilla ice cream as desired.
Method: Blend the mango pieces in a blender. Make a mixture by mixing milk, flour, salt, little sugar and 1 teaspoon of mango pulp with beaten eggs. Make crepes of the same size by greasing a little mixture or oil in the pan. Then fold it into a triangle shape. In another bowl add sugar and mango pulp or puree and add little mixture and cream. Remove after a few minutes with crepes. Serve cold with ice cream.
Thai Mango Sticky Rice
Ingredients: Binni rice 1 cup, coconut milk 1 cup, salt a little, sugar 1 tablespoon, mung dal (lentil) 1 tablespoon and mango pieces as desired.
Method: Clean and steam the binni rice. Thicken with coconut milk, sugar and a little salt. Fry the mung dal (lentil). Mix coconut milk with rice and serve with fried mung dal (lentil) and mango slices as desired.
