In Bangladesh, summer is synonymous with mangoes and while everyone is savouring mangoes the conventional way by peeling the skin and slicing them up, it’s time to relish mangoes by whipping up some succulent deserts.
This no-bake mango cheesecake is the perfect and easy treat that will titillate your taste buds and give you a tropical mango getaway.
Ingredients
- 2 cups of digestive biscuits crumbs
- ½ cup of melted butter
- 2 cups of cream cheese
- 1 teaspoon of vanilla extract
- 1 cup of whipped cream
- 1 cup of mango puree
- 1 packet of mango jelly
Instructions
Step 1- In a bowl, mix crushed digestive biscuits with melted butter until they are well combined. Press the mixture into the bottom of a seven-inch springform pan to form the base crust. Place it in the fridge for about half an hour while you prepare for the frosting.
Step 2- In a separate bowl, beat the cream cheese until smooth. Add in the vanilla extract and continue to beat until well combined
Step 3- Gently fold in the mango puree into the cream cheese until well incorporated
Step 4: In another bowl, whip the cream until it reaches stiff peaks. Carefully fold the whipped cream into the mango cream cheese mixture until fully combined.
Step 5: Take the crust out of the refrigerator and pour the mango cream cheese filling onto it.
Step 6: Cover the pan with plastic wrap and refrigerate the cheesecake for at least four hours or more, to allow it to set.
Step 7: Once the cheesecake is set, prepare the mango jelly according to the instructions on the packet and pour it over the top of the chilled cheesecake and let it set for over one or two hours in the refrigerator.
