Borhani: The traditional Bengali spiced yogurt drink

Borhani is a unique and flavorful yoghurt-based drink popular in Bangladesh, particularly in Dhaka and other urban regions.

It is a staple at weddings, festivals, and grand dawts, often served alongside rich and spicy dishes like kacchi biryani, polao, roast, and beef or mutton rezala. Unlike traditional sweet lassi or fruit-based yoghurt drinks, borhani is distinctly savoury, tangy, and packed with aromatic spices.

Origins and cultural significance

Although the exact origins of borhani are not well documented, it is believed to have been inspired by Persian and Mughal culinary traditions, which introduced yoghurt-based beverages to the Indian subcontinent.

Over time, the drink evolved into a uniquely Bengali creation, incorporating local spices and flavours. Today, borhani is an essential component of celebratory meals, appreciated for its ability to aid digestion and balance the heat from spicy foods.

Key ingredients and preparation

Borhani is made from a few key ingredients, each contributing to its distinctive taste and health benefits:

Sour yoghurt (tok doi): Yoghurt is the base of Borhani, and provides a creamy texture and a slight tanginess.

Mint and coriander: These fresh herbs add a refreshing, cooling effect and a vibrant green colour.

Green chillies: A small amount of green chilli gives borhani a mild heat, enhancing its depth of flavour.

Roasted cumin and black salt: These spices are essential for the drink’s characteristic smoky and earthy flavour.

Mustard seeds and black pepper: Mustard seeds add a subtle pungency, while black pepper provides warmth.

Lemon juice: Lemon juice adds extra acidity, making the drink even more tangy.

Sugar and water: These balance out the acidity and spice, ensuring a smooth consistency.

The preparation process is simple yet requires precision to achieve the right balance of flavours. The ingredients are blended and then strained to create a smooth drink. Some variations include adding chaat masala, and other spices.

Health benefits

Borhani is not just a flavorful accompaniment but also a highly nutritious drink. Yoghurt contains probiotics that promote gut health, while cumin, mustard, and mint aid digestion. The spices in borhani can also help regulate metabolism and provide anti-inflammatory benefits.
