Bagerhat's favourite cuisine: Shrimp brains and legs
The record low price of galda shrimp in recent times have incurred huge losses to the shrimp enclosure owners in Bagerhat district. But, surprisingly, the non-exportable shrimp parts – brains and leg – are selling at a high price at local markets. Locals are not very enthusiastic about the shrimp, and its farming is mainly targeted to tap money from the overseas markets. However, shrimp's head and leg, which have to be separated and left aside for export processing, have eventually been appropriated as a dish of the local cuisine. Currently, one kg of shrimp brain and leg is selling at Tk200. The credit goes to the small part-time fish vendors who started marketing these items. The part-time vendors collect the shrimp heads and legs in bulk from the shrimp depots and processing centres in Fakirhat upazila a very low price. Later, they extract the shrimp brains from the head. The extracted shrimp brains and legs are then displayed for sale at different spots, including in front of Foltita Fish Depot, Old Rail Station area, in front of Kazi Azahar Ali College in Fakirhat; Steel Bridge area in Chitalmari upazila; Chunkhola Bazar, Nashukhali Bazar in Mollahat upazila; Barakpur Bazar and Joydihi in Sadar upazila. Kalam Miah, a vendor at Sondha Market near Kazi Azahar Ali College, told the Dhaka Tribune: “Whatever the price is, the demand is very high. Business is faring very well for us.” Molla Masudur Rahman, who went to the market to buy shrimp legs, said: “In winter, the flesh inside shrimp legs makes a fabulous dish. Same goes for the shrimp brain. We're buying it at Tk200 a kg.” Farhad Hossain, another customer, said he was going to buy the shrimp brains and legs to send it to his daughter's in-laws.
