The season of Eid-ul-Azha has arrived, it brings with it the tradition of savouring beef dishes at every meal, breakfast, lunch, and dinner. Therefore, it's essential to bring variety to beef recipes during this time.
Meanwhile, it's also the season for mangoes, and although not all varieties are ripe yet, the unripe mangoes offer a unique opportunity to infuse a tangy twist into traditional beef recipes.
Thus, this is a great opportunity to cook a fantastic beef recipe using unripe mangoes. Here’s how you can bring this innovative dish to your Eid table.
Ingredients for the recipe include 1kg of beef and 2 unripe mangoes. You will also need half a cup of mustard oil and 3 dry red chillies to add a bit of heat.
For the spices, use 1 tablespoon of whole cumin, half a tablespoon of coriander powder, 2 teaspoons each of panch phoron and panch phoron powder, and half a teaspoon of ground black pepper. Incorporate 2 bay leaves for aroma.
For the base, mix half a cup of chopped onions, 8-10 garlic cloves, 2 tablespoons each of ginger paste and garlic paste. Add 1 tablespoon of dry chili powder and 1 teaspoon of turmeric powder. Season with salt to taste.
First, in a cooking pan, heat the oil and lightly fry the dry red chilies, panch phoron, whole cumin, and bay leaves. Then, sauté the chopped onions until they are light brown.
In the same oil, add ginger paste, garlic paste, and powdered spices and sauté them well. Then, add the beef and cook it thoroughly with the spices. Once the beef is well cooked, add hot water, cover, and simmer for 35-40 minutes.
Then, add panch phoron powder, ground cumin, whole garlic, and pieces of unripe mango and cook on low heat for 15 minutes. Once the beef is fully cooked, remove it from heat and serve it.
